Light and extremely nutritious salad recipe! This Fresh Mushroom Salad with Highline White Mushrooms is tossed in a tangy lemon Parmesan vinaigrette and so easy to make.

Ingredients:

16 oz Highline White Mushrooms, sliced
1 sprig of parsley, chopped
¼ cup lemon juice
2 tbsp olive oil
1 clove of garlic, minced
2 tbsp Parmesan cheese, finely grated
Salt & pepper, to taste

Instructions:

  1. In a small jar combine olive oil, lemon juice, and garlic. Season with salt & pepper, then shake well.
  2. In a large serving bowl add mushrooms, drizzle with dressing and toss well.
  3. Garnish with additional parsley & enjoy.
