Ingredients:
16 oz Highline Mushrooms Portabella Caps, stems removed and sliced
1 cup balsamic vinegar, divided
3 tbsp Dijon mustard
4 tbsp olive oil
Salt, to taste
1 onion, sliced
ÂĽ cup vegan mayo
4 sandwich buns
Instructions:
- Add 2 tablespoons of olive oil to a pan on medium heat. Add onions and cook for 10 minutes until onions are caramelized. Add ½ cup balsamic vinegar and salt to the pan. Remove onions.
- Add mushrooms to the pan with the remaining balsamic vinegar, Dijon, and olive oil. Cook on medium heat for 10 minutes until mushrooms are tender.
- To assemble the sliders, spread mayo on buns and add onions and mushrooms. Enjoy!
