Enjoy these Grilled Cajun-Style Mushroom Kabobs for grilling season. Highline White Mushrooms grilled with the freshest vegetables in a Cajun seasoning make the perfect meal for any backyard barbeque.
Ingredients:
16 oz Highline White Mushrooms, stems removed
1 large green bell pepper, cut into 2 inch pieces
1 large yellow bell pepper, cut into 2 inch pieces
1 pint grape tomatoes
1 small zucchini, cut into 1/2 inch rounds
ÂĽ cup olive oil, plus more for grates
1 tbsp Cajun seasoning
2 tsp hot sauce
Long grain rice, optional for serving.
Instructions:
- Place mushrooms, peppers, onions, tomatoes and zucchini in large resealable plastic bag. Add oil, Cajun seasoning and hot sauce. Massage mixture into vegetables to cover completely.
- Preheat grill to medium heat and brush grates with oil. Remove vegetables from marinade. Set marinade aside for brushing kabobs while grilling.
- Thread 8 skewers with mushrooms, peppers, onions and tomatoes, alternating ingredients evenly.
- Grill kabobs, flipping occasionally and brushing with reserved lemon mixture, until vegetables are tender, about 8-10 minutes. Serve with rice and enjoy.
