Start your morning right with Mexican Mushroom Breakfast Tostadas with Highline White Mushrooms! Crispy tostadas, smashed avocado, Mexican spiced mushrooms, and a perfect egg on top.
Ingredients:
For the tostadas:
16 oz Highline White Mushrooms, thinly sliced
2 tbsp avocado oil
2 cloves of garlic, minced
1 tbsp butter
½ avocado, smashed
1 lime, juiced
2 eggs
2 corn tostadas
Garlic powder, to taste
Salt & pepper, to taste
Cherry tomatoes, diced for garnish
Chives, for garnish
For the spice mix:
Âľ tsp salt
1 tsp Mexican oregano
1 tsp chili powder
2 tsp ground cumin
2 tsp garlic powder
1 tsp smoked paprika
Cayenne pepper, to taste
Instructions:
- Combine all ingredients to make the spice mix.
- Warm avocado oil in a saucepan over low-medium heat. Add garlic, spice mix and sauté for 1 minute. Then add butter & mushrooms and continue to cook for 5 minutes.
- Season smashed avocado with salt, half of the lime juice and garlic powder. Set aside.
- Preheat pan to medium heat. Crack eggs into the pan and cook until sunny side up. Season with salt & pepper.
- To assemble the tostadas spread avocado mixture, add mushrooms, and top with an egg.
- Garnish with tomatoes, chives and remaining lime juice.
