Elevate your appetizers with these vegetarian Mushroom Dijon Puff Pastry Bites. A bite-sized punch of flavors with of a flakey puff pastry, caramelized onions, grainy Dijon mustard, and sautéed Highline Mini Bella Mushrooms.
Ingredients:
16 oz Highline® Mini Bella Mushrooms, sliced
2 tbsp olive oil, divided
1 yellow onion, sliced
½ tsp garlic, minced
2 tsp fresh thyme, chopped
½ cup Gruyere cheese, shredded
2 frozen puff pastry, thawed
1 egg, beaten
3 tbsp whole-grain Dijon mustard
Salt and pepper, to taste
Fresh parsley, for garnish
Instructions:
- Preheat oven to 400 F. Line a baking sheet with parchment paper and set aside.
- In a large skillet, heat oil over medium heat. Add onions and salt. Sauté onions for 10 minutes until brown and caramelized. Add in mushrooms and sauté until tender for 5 minutes. Add garlic, thyme and pepper. Sauté for an additional minute. Place in a bowl and stir in cheese.
- On a floured surface, roll out the puff pastry. Cut pastry into 2-inch circles with a cook cutter. Transfer the puff pastry to the baking sheet and brush with an egg.
- Top each pastry with mustard, followed by the mushroom filling.
- Bake for 25 minutes until pastry is golden and crisp. Garnish with fresh parsley and serve.
