Elevate the classic mushroom toast by sautéing Highline Mini Bella Mushrooms with Marsala wine, garlic, and herbs to create a Mushroom Marsala toast that reaches new levels of flavor.

Ingredients:

 24 oz Highline® Mini Bella Mushrooms, sliced
 3 tbsp olive oil
 2 shallots, peeled & quartered
 2 cloves of garlic, minced
 2 springs of thyme
 ½ cup Marsala wine
 ¼ cup chicken stock
 2 tbsp butter
 6 slices of bread, toasted
 Fresh parsley, for garnish
 Salt & pepper, to taste

Instructions:

  1. Heat olive oil in a large skillet over high heat. Add shallots, mushrooms, garlic, and thyme. Cook for 5 minutes, stirring occasionally.
  2. Add wine and cook until it reduces by half; then, add chicken stock and cook for another 3 minutes.
  3. Stir butter into the mushrooms and remove from heat. Season with salt and pepper.
  4. Top slices of toast with the mushroom mixture and garnish with fresh parsley.
