Whip up an easy weeknight vegetarian dinner with our Mushroom Penne using Highline Sauté Blend Mushrooms. It is the perfect balance of White, Mini Bella, and Shiitake mushrooms in a homemade marinara sauce.

Ingredients:

6 oz Highline® Sauté Blend Mushrooms
1 tbsp olive oil
2 cloves garlic, minced
2 tbsp tomato paste
1 can, diced tomatoes
1 tbsp Italian seasoning
Salt and pepper, to taste
10 oz penne, cooked according to package instructions
1 cup reserved pasta water
Parmesan cheese, to taste
Parsley, for garnish

Instructions:

  1. In a medium pan, heat oil on medium heat. Add mushrooms and thyme and sauté for 7 minutes.
  2. In another pan on medium heat add garlic, tomato paste, tomatoes, Italian seasoning, and salt and pepper. Cook for 3 minutes.
  3. Combine penne noodles and sauce with reserved pasta water until you achieve the desired consistency.
  4. Transfer pasta to a plate, top with sautéed mushroom, and Parmesan cheese, and garnish with parsley to enjoy.
