Savor the blend of flavors in this Mushroom “Scallop” Fettucine. Highline King Oyster Mushrooms mimic scallops in a homemade creamy alfredo sauce, ready in just 30 minutes.

Ingredients:

7 oz Highline® King Oyster Mushrooms, sliced
1 tbsp olive oil
½ cup butter
2 cloves garlic, minced
1 cup heavy whipping cream
½ cup Parmesan cheese, grated
16 oz fettucine, cooked according to package instructions
1 cup reserved pasta water
Salt and peper, to taste

Instructions:

  1. In medium pan, heat oil on medium heat. Add sliced mushrooms and sauté for 3 minutes on each side until browned.
  2. In another pan on medium heat add butter, garlic, and simmer for 2 minutes. Add cream, Parmesan cheese, salt and pepper. Whisk well and cook for an additional 3 minutes.
  3. Pour Alfredo sauce over fettuccine and toss with reserved pasta water until you achieve the desired consistency.
  4. To serve, plate pasta, top with seared mushrooms, and season with more salt and pepper.
  5. Garnish with fresh parsley and enjoy!
