Savor the blend of flavors in this Mushroom “Scallop” Fettucine. Highline King Oyster Mushrooms mimic scallops in a homemade creamy alfredo sauce, ready in just 30 minutes.
Ingredients:
7 oz Highline® King Oyster Mushrooms, sliced
1 tbsp olive oil
½ cup butter
2 cloves garlic, minced
1 cup heavy whipping cream
½ cup Parmesan cheese, grated
16 oz fettucine, cooked according to package instructions
1 cup reserved pasta water
Salt and peper, to taste
Instructions:
- In medium pan, heat oil on medium heat. Add sliced mushrooms and sauté for 3 minutes on each side until browned.
- In another pan on medium heat add butter, garlic, and simmer for 2 minutes. Add cream, Parmesan cheese, salt and pepper. Whisk well and cook for an additional 3 minutes.
- Pour Alfredo sauce over fettuccine and toss with reserved pasta water until you achieve the desired consistency.
- To serve, plate pasta, top with seared mushrooms, and season with more salt and pepper.
- Garnish with fresh parsley and enjoy!
