Just when you thought French onion soup couldn’t get any better, we’ve infused it with the earthy flavors of Highline Shiitake Mushrooms for this Shiitake French Onion Soup.
8 oz Highline Shiitake Mushrooms, sliced
 ½ cup unsalted butter
 2 tbsp olive oil
 4 cups onions, peeled and sliced
 5 cups vegetable broth
 1 tsp dried thyme
 2 cloves garlic, minced
 ½ cup dry white wine
 Salt and pepper, to taste
 1 baguette, sliced for serving
 Fresh parsley, for garnish
- Heat olive oil in a large pot on medium heat. Add onions and toss to coat with oil. Cook onions, stirring often until they have softened about 15 to 20 minutes
- Increase the heat to medium high. Add the butter and cook until onions start to brown for about 20 minutes. Add salt, garlic and continue to cook for another minute. Add the wine to the pot and scrape up the browned bits on the bottom and side of the pot.
- Add in stock, thyme, and mushrooms. Lower the heat and cover. Cook for 30 minutes. Season to taste with more salt and black pepper.
